Chicken Enchilada Soup

If you are like me, you have zero time to slave over a hot pot to make soup for the family on a cold day. Here is a super easy and yummy 😋 recipe that can be made in 30 minutes.

Ingredients
▪️1 white onion
▪️2 cloves garlic minced
▪️1 Tbsp taco seasoning
▪️1 Lb chicken
▪️ 10 oz can Ro Tel Diced tomatoes and chilies
▪️15 oz can black beans (drained)
▪️14.5 oz can diced tomatoes
▪️10 oz can enchilada sauce ( I used green)

2CUPS Chicken Broth

1 CUP Water

This is an instant pot recipe but can easily be converted to crockpot.

Turn instant pot to sauté. If using a crockpot this step will be done in a saute pan.

Pour oil, onion and taco seasoning. Cook till translucent, which is about 3-4 minutes.
Add garlic and cook for 30 seconds till fragrant.

Now comes the super hard part!!! Are you ready???

Open all the cans and pour them in.😅🤣 Place chicken on top.
▫️Close lid and seal value
▫️Pressure cook 20 minutes
▫️Let natural release for 5
🔴Use a oven mit and or towel to open value.

Please be very careful here. This is extremely hot steam coming out. DO NOT put your face by it!!!!!!!
▫️Pull chicken out and shred, then return to pot. Again I always  list my favorite kitchen supplies.

Push keep warm button till you’re ready to eat.
▫️Top with avocado and sour cream.

**NOTE : You can store in the freezer for 3 months. I cook this soup and storage it in two containers so I have it ready for two meals.
