Instant Pot Chicken Tacos

 

This is the easiest recipe and can be made in 30 minutes. I don’t know about ya’ll but I am a super busy mom who runs two businesses, has two kiddos under three! So getting dinner on the table needs to be quick, simple and toddler approved!

Everyone loves taco and I am sure most of you will have these ingredients in your house! So lets get started!!!!!

Ingredients:

4 Chicken breast ( Around 2lbs)

8 Oz Favoite Salsa

3/4 Cup Chicken Stock

2 Tbsp Taco Seasoning

1 Sweet Onion

4 Oz  Can Diced Chiles (Drained)

1Tsp Minced Garlic

Ok here we go…….

Get your instant pot out! I know if you have been following me by now you definitely have an instant pot!!! WHY???

BECAUSE THEY ARE AMAZING!!!!!

Place chicken and broth in pot, trying not to have the breast  top of each other.

Then add all remaining ingredients.

Mix together and cover and make sure the vent is SEALED! I say this in all my instant pot recipes so it is probably getting annoying.

Sorry, not sorry.

Press the pressure cook button and change time to 18 minutes.

It will take a few minutes for your pot to fill up. Once pressure is correct then the timer will begin the count down. Depending on if you are in a hurry when  timer is up you can either wait for natural release or you can take an oven mitt and turn valve to open and release steam.

PLEASE DO NOT HAVE YOUR FACE ANYWHERE NEAR THE VAVLVE!!!

HOT STEAM TO THE FACE, NO BUENO.

Remove chicken from pot and start shredding!!!

Reserve 1/2 cup of liquid and discard the rest.

Take shredded chicken and remaining liquid and place back in pot. Set to keep warm and you are all set!

Served with warmed tortillas,  homemade pico and diced avocados or sliced jalapeno to spice it up!
